EASY VEGAN FRIED RICE

Take 1 cup of extra-firm tofu, and dice into small cubes, then bake in the oven for 25-30 mins. Whilst the tofu is cooking in the oven cook 1 cup of long-grain brown rice.

Take 4 cloves of minced garlic, 1 cup of chopped green onion, 1/2 cup of peas and 1/2 cup of finely diced carrots and add them to the rice. Cook them in a pan whilst adding soy sauce, peanut butter, and garlic paste to your taste preference.

Add in the cooked tofu and serve in a bowl!
